Roadkill haas

Ik vind een dode haas langs de weg. Het oogt fris en fruitig: de ogen helder, de vacht glad en glimmend en het haas is nog niet stijf. Hij/zij gaat met mij mee. Thuis haal ik het vlees er af. 

In het boek The Wild Life, van John Lewis-Stempel, zie ik een recept voor konijn. Dat is mijn inspiratie.  

Roast rabbit with honey glaze

Take a skinned rabbit and soak it in a cold water solution for one hour, than pat it dry. Brush the rabbit with generous amounts of clear honey and leave to dry (it wont dry off completely, but tacky dry wil do). Repeat. And repeat. Place the rabbit in a roasting pan and cook at 170 celsius or gas mark 4 for about an hour to an hour and a quarter. The crisp, brown sweetness of the outer flesh is sublime; so is the contrast with the inner flesh, made white by the soaking in salt water.

Ik heb het vlees een paar uur in honing gemarineerd en daarna gebakken. Lekkerrr!
